Byron’s Barbecue Beans

Byron Bates thinks big, really big when he makes these beans. The recipe can be cut down to fit your needs. Note: To plump raisins, place them in a saucepan covered with water or fruit juice. Bring mixture to a boil, reduce heat and cook for a couple of minutes or until raisins are soft and plump.

1  #10 can pinto beans, drained and well rinsed

1  pound golden raisins, plumped

3  cups chopped onion

2  cups diced cooking apples (Granny Smith, Rome, Spy, etc.)

3/4  cup cane sugar syrup

1 1/2  cups Datil Dew Outback Red Datil Pepper Sauce

1  cup Datil Dew 6 Mile Gold Datil Pepper sauce

1/4  cup Datil Dew Burgundy Mustard

1/2  pound bacon cut into 1-inch squares

Preheat the oven to 350 degrees.

Combine the drained and rinsed beans, raisins, onions, apples, syrup, pepper sauces and mustard in a very large bowl. Mix all the ingredients together well. Divide the mixture equally among three 9-inch by 12-inch baking pans.

Arrange cut bacon evenly over the beans in each of the pans. Bake at 350 degrees for approximately 50 minutes or until bacon is cooked.

Yield: About 25 servings

Heat Scale: Medium Hot

Datiled Eggs

If you can’t find this brand of mustard, use any mustard with chile peppers in it.

12 hard cooked eggs

1/4 to 1/3 cup Datil Dew Burgundy Mustard

1/4 to 1/3 cup mayonnaise

Salt and pepper to taste

Peel the eggs and split them in half lengthwise. Scoop out the yolks and combine them in a bowl with the mustard, mayonnaise, and salt and pepper. Mix until smooth. Spoon the mixture into the egg halves or place the mixture into a quart-sized plastic bag. Clip off one corner of the bag and pipe the mixture in to the eggs.

Yield: 12 eggs

Minorcan Clam Chowder

1  pound Bacon
6.5 oz.  minced clams
2.5  cups water
3 tbl  Clam base
16 oz.  canned diced tomatoes
3  potatoes peeled and diced
2  yellow onion diced
2  red bell peppers diced
2  green bell peppers diced
3/4 tsp dried thyme
2 habanero peppers or 2 datil peppers diced with seeds

Preparation:
Render bacon in a large saucepan, add onions and peppers, saute' until translucent. Add diced clams, tomatoes and potatoes. Mix clam base with water and add to soup. Let simmer for 35 to 45 min. Serve hot. (Serves 10)

Datil Dew Hot Wings

For best results use:*Outback Red* *Burgundy Mustard* *Inferno* *Six Mile Gold* or *Meat Mate*

Use as many chicken wings as you want for this recipe!

Preparation:
Boil chicken wings till tender (not too) - then refrigerate
In a large skillet, turned to HIGH, toss in chicken wings and add enough sauce to coat.
Cook till pan is dry and wings are sticky and gooey like.
Finger lickin good!!

Datil Dew Datil Dips

For best results use:*Burgundy Mustard* *Inferno* *Six Mile Gold* or *Meat Mate*

Preparation:
One 8 oz. block of cream cheese
2 - 3 oz. your choice of sauce to taste
Mix till fluffy  (use hand blender or any type blender)
Add chopped green onions, bacon bits, sun dried tomatoes or ripe olives if desired.....OR
Use your imagination and get personal!  (excellent with Ritz type crackers)

Datil Teach ya New York Strips

Marinade:  Pour 1/2 cup Meat Mate Datil Dew Pepper Sauce into a glass dish.  Mix in 1/2 cup water and 1/2 teaspoon of baking powder.  Put 4 cold 8 ounce New York strip steaks in dish and spoon sauce over steaks.  Let sit at room temperature for 30 to 45 minutes.  Grill steaks and serve with assortment of Datil Dew Pepper Sauces for extra flavor.

Raz L' Datil Ruben

Place swiss cheese and corned beef on a slice of rye bread.  Spread 2 tablespoons of Raz L' Datil Sauce on the corned beef.  Forget the slaw or kraut.  Cover it with a 2nd piece of rye bread and grill.  Serve with Country Deli Datil Dills.

Easy Nachos

Use SIX MILE GOLD, OUTBACK RED, OR MEAT MATE.


1. In oiled skillet fry till "crumbly" (cook on high, just don't burn)
2. 1 lb ground beef or hamburger
3. 2 Tablespoons minced garlic ( I use the cheap stuff in the jar )
4. Add the Datil Dew sauce of your choice till moist and fry on high till hot.
5. Spoon mixture in the "scoops" by Frito Lay or on nacho chips.
As an added treat spoon on some re-fried beans and melted cheese.
This takes less than 5 minutes to prepare and is a real treat!

Bottled Hell

 - This recipe was sent to me by a relative of Helen E. Becker.  Her Bottled Hell recipe was a favorite almost 50 years ago and still is today.  She published the recipe in her cook book 'Food Favorites of Olde St. Augustine' in 1959.  This sauce is supposed to be very hot, with a strong datil pepper taste, and intended only for the datil pepper aficionado.

Into an electric blender, put 2 cups of datil peppers and 1/2 cup of vinegar.  Mix for 5 minutes.  Put mixture into a saucepan;  add 2 large bottles of ketchup (back then, that would have been a 16 oz. (pint) bottle of ketchup, so use 2), plus 2 1/2 cups of vinegar.  Bring to boil and simmer for 10 minutes.  Fill into small bottles.  Use caution! :-)
